BOILED MAKEREL TUNA (SINAING NA TULINGAN)
Ingredients:
Makerel Tuna (Tulingan small to medium size – partially sliced) – 1kg
Pork belly (thin sliced) – 300g
Bilimbi (Kamyas sliced ) – 15 to 20pcs
Banana leaf (separate leaf from thin sliced Mid Rib part of the leaf) – 2pcs
Garlic – 1 head
Salt – 2 tsp
Pepper – 1 to 2 tsp
Water – 5 cups
Olive Oil – ¼ cup
1. Meat Fish Prep
Season fish with salt, garlic, and pepper.
Wrap fish using banana leaf.
Tie the wrap using banana mid rib.
2. Cooking prep
Lay the pork meat first as bedding in a pan.
Spread out half of the bilimbi (kamyas).
Arrange the wrapped fish to be on top.
Add the rest of the bilimbi.
Pour water about 5 cups covering 75% of the fish.
3. Boiling fish
Bring to boil for 2-3 hrs in a low to medium-low fire.
After an hour, add olive oil.
Ccontinue to cook.
4. Serve and Enjoy!
