CRISPY PORK BINAGOONGAN
Ingredients:
Pork belly - 1kg
Salt - 2 tsp
Water - 2 ltr
Cooking oil - 1/4 cup
Egg plant - 300g
Okra - 150g
Cooking Oil - 1/4 cup
Garlic - 1 head
Onion - 1 head
Tomato - 450g
Pepper - 1 tsp
Paprika - 3 tsp
Long chilli - 20g
Bagoong alamang - 3 heap tbsp
1. Boiling the meat
First, lay the pork belly in a deep pan.
Pour in enough water to fully submerge the meat.
Add salt.
Cover the pork with a lid and let it simmer for 20 minutes.
Once done, remove the pork from the pan.
2. Air fry the meat
Next, place the pork belly in the air fryer basket, making sure they are not overcrowded.
Set the air fryer for 200 degrees 20 minutes (each side).
Carefully flip each piece to the underside.
After air frying, set the crispy pork belly aside and let it cool until it’s comfortable to handle.
Cut into serving portions.
3. Fry the vegetables
Preheat the cooking oil.
Add the okra to the hot oil.
Fry for 3-4 minutes until lightly browned and crisp around edges.
Remove it from the pan and set aside.
Next, carefully place the eggplant into the pan.
Cook for about 4-5 minutes per side until the edges are soft and caramelized.
Once it’s done, we’ll set it aside and bring everything together later.
4. Prepare the sauce
Heat the oil in a pan over medium heat.
Add the chopped onion and sauté until translucent and fragrant.
Add the garlic and cook briefly until golden and aromatic.
Toss in the tomato.
Add pepper and paprika.
Stir well, allowing the flavors to meld into a rich, fragrant base.
Cover cook the pan for about 8-10 minutes until the tomato breaks down and becomes pulpy.
Mash the tomatoes lightly to help release their juices.
Stir in the regular sautéed bagoong alamang.
Cook for 1-2 minutes to deepen the flavors.
Add the sliced chili and cook for 1-2 minutes.
5. Prepare the dish
Bring it all together as you like.
Serve and enjoy!
