These smoked beef ribs were cooked low and slow on the Masterbuilt Gravity 800 at 300°F, running a full BBQ shakedown from start to finish.
I used The Pickle Project black garlic mustard as a binder, followed by Smoke Chamber BBQ “Beef Shakedown” rub, letting the bark fully set before wrapping with beef tallow. From there it was back into the pit until the ribs were probe tender, with an overall cook time of around 5 hours.
This cook is all about texture, bark, and rendering, and shows just how capable the Masterbuilt Gravity is for long, consistent beef cooks.
