📖 Ingredients (2–3 servings):
• Pearl barley — 150 g (cooked until soft)
• Mushrooms — 200 g
• Zucchini — 1 small
• Yellow string beans — 200 g
• Cherry tomatoes — 150 g
• Red onion — 1 pc
• Olive oil — 2–3 tbsp
• Soy sauce — 1 tbsp
• Lemon juice — 1 tbsp
• Fresh herbs (parsley or basil)
• Salt, pepper — to taste
✨ Cooking steps:
1. Cook pearl barley until tender (30–40 min).
2. Boil beans for 5–6 min, then cool.
3. Slice onion into half rings, zucchini into cubes, mushrooms into slices.
4. Sauté onion, add mushrooms and zucchini, cook until golden.
5. Add beans and halved cherry tomatoes, heat through.
6. Mix veggies with barley, drizzle with olive oil, soy sauce & lemon juice.
7. Sprinkle with fresh herbs 🌱.
