A vibrant warm veggie bowl that brings together roasted mushrooms, broccoli, crunchy napa cabbage, creamy avocado, and a silky roasted red pepper dressing. 💚 Perfect for a nourishing lunch or light dinner.
✅ Ingredients:• 100g broccoli• 3 napa cabbage leaves• 1 red bell pepper (roasted)• 150–200g mushrooms• 6–8 cherry tomatoes• 1/2 avocado (sliced)• Olive oil, salt, pepper, turmeric
✅ For the creamy roasted pepper sauce:• Roasted red bell pepper (skin removed)• 1 tsp mustard• 1 tsp lemon juice• 1 tbsp yogurt or water (to adjust texture)
👨🍳 Instructions:
1. Roast the bell pepper and peel it.
2. Slice and pan-sear all vegetables in olive oil separately for texture.
3. Shred the napa cabbage.
4. Blend the sauce ingredients until smooth and creamy.
