材料配方 Ingredients::(6 個,6 pieces)
高筋麵粉 180克 / Bread flour 180g
低筋麵粉 20克 / Cake flour 20g
細砂糖 18克 / Castor sugar 18g
即溶酵母 2克 / Instant yeast 2g
奶粉 18克 / Milk powder 18g
水 125克+- / Water 125g+-
鹽巴 2.5克 / Salt 2.5g
無鹽奶油 16克 / Unsalted butter 16g
豆沙餡 120克 / Red bean paste fillings 120g
抹茶酥皮 Matcha puff:
無鹽奶油 28克 / Unsalted butter 28g
細砂糖 22克 / Castor sugar 22g
全蛋液 12克 / Whole egg 12g
奶粉12克 / Milk powder 12g
低筋麵粉 45克 / Cake flour 45g
抹茶粉 3克 / Matcha powder 3g
製作步驟 Instructions:
1.將高筋麵粉,低筋麵粉,細砂糖,奶粉,酵母和水放入主鍋,設置揉麵功能2分鐘,揉麵。
Add bread flour, cake flour, sugar, yeast, and water into the mixing bowl, set the kneading function for 2 minutes.
2.加入奶油和鹽巴,然後設置揉麵功能3分鐘。
Add butter and salt into the mixing bowl, then set the kneading function for another 3 minutes.
3.取出麵團,搓揉麵團至表面呈現光滑,并將麵團往下方摺叠的手法,形成一個光滑的圓球。將麵團放入碗中,用乾淨的佈蓋上,之後放到室温28攝氏度的地方發酵60分鐘或發酵到兩倍大。
Take the dough and knead it till a smooth dough then fold it around and underneath itself shaping a smooth ball. Place the dough in a bowl, cover with a clean kitchen towel, and let it ferment for 60 minutes at 28°C room temperature, or until doubled in size.
4.將軟化奶油和細砂糖攪拌混匀,分次加入全蛋液混匀,然後加入過篩的低筋麵粉,奶粉和抹茶粉攪拌混匀,之後包上保鮮膜冷藏備用。
Mix the softened butter and icing sugar, add the egg mixture and mix well, then add the sifted cake flour, milk powder and matcha powder and mix well. Wrap the matcha puff with plastic wrap and refrigerate.
5.一次發酵后, 用手指蘸上麵粉然後在麵團的中間戳一個洞,如果麵團不塌陷就代表發酵的剛好。取出麵團,排氣,然後分割成6等份。取出一份麵團排氣,往下方摺叠的手法收緊滾圓。重複排氣滾圓剩餘的麵團,之後用乾淨的佈蓋上,静置15分鐘。
When the first fermentation is done, dip your finger in the flour and poke a hole in the middle of the dough, if the indentation remains, it means the dough is right proofed. Take the dough, squeeze out the bubbles by tapping and divide the dough into 6 equal portions. Take one piece of dough, squeeze out the bubbles by tapping and folding it over itself. Using both hands, mold the dough into a ball. Repeat the steps for rest of the dough. Cover with a clean kitchen towel and let it rest for 15 minutes.
6.將豆沙餡分出6等份(每份20克)。將抹茶酥皮分出12等份(每份10克)。
Divide the red bean paste filling into 6 equal portions (20g each). Divide the matcha puff into 12 equal portions (10g each).
7.静置15分鐘后, 取出一份麵團,排氣,擀成長橢圓形,然後放上紅豆餡,之後提起三邊捏緊收口。將麵團翻過來,整理成三角形。取兩份抹茶酥皮,擀開成牛舌狀,然後交叉貼在麵包下半部分,之後用刮刀割出紋理。重複其餘的麵團。將麵團放入已鋪上烘培紙的模具里,蓋上乾淨的佈,之後放到室溫於30-33攝氏度左右,發酵60分鐘。
After 15 minutes, take one piece of dough, squeeze out the bubbles by tapping and roll the dough out flat into round shape, then add the red bean fillings on the dough. Lift up the three sides and seal it tightly. Take two pieces of matcha puff, roll it out into a oval shape, stick the matcha puff crosswise on the lower part of the bread, then use a scraper to score the matcha puff. Place the dough into the baking pan which lined with parchment paper. Repeat with the rest of the dough. Cover it with a clean kitchen towel and let it proof for second time for about 60 minutes at 30-33°C room temperature.
8.烤箱預熱170攝氏度,入烤箱烘烤13-15分鐘(每一台的烤箱不同,請大家自己斟酌烤箱溫度与時間)。烘烤到吐司的表面變金黃色后,蓋上錫箔紙繼續烘烤。从烤箱中取出, 輕敲幾下排出空氣, 之後將麵包轉移到凉架上晾涼。稍微放涼後,可以用融化巧克力點綴上可愛的五官,之後就可以享用這美味又可愛的粽子豆沙麵包啦!這款麵包口感蓬鬆柔軟,搭配了豆沙餡和抹茶酥皮,口感和味道上都非常的搭配好吃。端午節快到了,這可愛的粽子造型麵包超級應景又滿滿的儀式感,小朋友一定很是喜愛,也很適合當早餐吃。這款麵包製作非常簡單,大家一起學做起來吧!
Preheat the oven to 170°C, bake for 13-15 minutes (Everyone's oven is different, you may adjust the temperature and baking time based on your oven). Bake until the surface of the bread is colored with golden brown then cover with aluminium foil and continue baking. Remove the bread from the oven, tap on the table a few times to remove air bubbles then transfer to a cooling rack. After the bread slightly cool down, use melted chocolate to draw the facial features, after then it’s ready to serve this delicious and cute dumpling red bean bread! The bread has a soft and fluffy texture and it filled with red bean paste and matcha puff, everything is perfectly match and delicious.
