Traditional Eritrean & Ethiopian dish, Zigni Dorho (chicken stew) and Zigni Siga (Meat stew). Every mother may have a different recipe but this is the recipe that I follow that my mother has showed me. Hope you enjoy!
What you will need:
2 large cooking pots
20 Red Onions
2 garlic bulbs (or 20 cloves)
two pieces of ginger (2cm cubes each)
2/3 cup of canola oil
dilik (sauted berbere)
berbere powder
tesmi
two Mature chickens or Hen
2 pound of lamb or beef (without bone)
5 pound of lamb or beef (with bone)
salt
canned or fresh tomatoes
TIME AND PATIENCE (This will take approximately 5 to 6 hours in total, prep and cooking time. If I knew a faster way I would tell you guys! lol)
This will serve a family with guests, and the amount will last you a few days to a week.
