Crispy Fried Chicken Kebabs | Bangalore Empire Style Famous Chicken Kebab Recipe
Crispy on the outside, juicy on the inside – these Fried Chicken Kebabs, Bangalore Empire Restaurant Style, are an absolute treat! 🍗✨
In this recipe, chicken pieces are marinated with aromatic spices, coated in a light flour-egg mixture, and deep-fried to golden perfection. Serve them hot with onion rings, lemon wedges, and mint chutney, or enjoy them as a side with biryani, jeera rice, or parotta.
Try this easy homemade version of the famous Empire Style Chicken Kebab and bring restaurant taste straight to your kitchen!
Ingredients :
500 gms Chicken bone-in or boneless chicken (cut into medium pieces)
Marination I :
500 gms Chicken (medium curry cut pieces with bone)
½ tsp Turmeric Powder
1 ½ tbsp Kashmiri Chilli Powder
1 tsp Coriander Powder (Dhaniya Powder)
½ tsp Cumin Powder (Jeera Powder)
1 tsp Black Pepper Powder
1 tsp Ginger Garlic Paste
2 nos. Green Chillies (crushed)
½ tsp Salt (or as per taste)
4 to 5 drops Red Food Colour
1 tbsp Lemon Juice
Marination II :
3 tbsp All Purpose Flour (Maida)
1 tbsp Corn Flour
1 tbsp Rice Flour
1 Egg (well beaten)
Other Ingredients :
Oil, for deep frying
🔹 Pro Tips for Perfect Fried Chicken Kebabs
Double Marination – The first marination allows spices and lemon juice to penetrate, while the second marination with flour and egg gives the kebabs their signature crispy coating.
Resting Time – Marinate for at least 1 hour. For best flavor, refrigerate 3–4 hours or overnight.
Oil Temperature – Fry on medium heat. Too hot, and the outside browns before the inside cooks; too low, and the chicken absorbs oil.
Do Not Turn Immediately – Let the chicken set and crisp on one side before turning, otherwise the coating may break.
Fry in Batches – Avoid overcrowding the pan to maintain oil temperature and crispiness.
Drain Well – Place fried chicken on a wire rack to remove excess oil and keep it crispy.
Extra Flavor – Fry some curry leaves and slit green chilies in the same oil and serve them along with the kebabs.
