How To Make The Best Biscoff Cookies Ever (EASY)

If you asked me what the ultimate Biscoff Cookie was, I'd say this one! It's my husband's favourite too. So stick around and let's make the best Biscoff cookies ever!

All you need is:

For the cookies:
250g Lotus Biscoff biscuits
145g plain flour
25g cornflour
1/2 tsp bicarbonate of soda
1/4 tsp baking powder
1/2 tsp salt
190g unsalted butter, softened
90g granulated sugar
30g icing sugar
1 large egg, room temp

For the Biscoff buttercream:
60g Unsalted Butter, softened
60g Biscoff spread
180g Icing sugar, sifted
1 tbsp Milk
2 cushed Biscoff biscuits to decorate

Makes approx 14-15 cookies

Bake 180C/160C (fan) 8-10 mins - let them cool before making the icing 🥰

Make sure you don’t overbake otherwise they’ll go hard and crunchy 🙅‍♀️

Tip: The best way to up your baking skills is to put down the cups and get a kitchen scale to measure your ingredients accurately
