Aquafaba Butter (Vegan, Gluten Free)

If you'd like to save a couple dollars on vegan butter, whip up your own! Once you get the technique down, you'll love making (and eating) this fluffy, soft, spreadable butter. Recipe below:
Recipe:
1/3 cup + 1 Tablespoon aquafaba
2 teaspoons apple cider vinegar
1 teaspoon sea salt
2 1/2 Tablespoons extra virgin olive oil
2/3 cup + 2 Tablespoons melted coconut oil (I recommend using deodorized/refined coconut oil so that you don't have a "coconuty" taste to your butter)
In a medium bowl add aquafaba, apple cider vinegar and salt. Start whipping with a hand or immersion blender (about 1 minute).
Slowly add in olive oil and coconut oil. Continue whipping (about 1-2 minutes).
Put over an ice bath and continue whipping until fluffy and solid. This will take awhile, so please be patient (at least 5 minutes).
Transfer to a container and either store on counter (for soft butter) or in fridge (for stiff butter).
