This time, Chef Matsumoto from noura, a sister restaurant of 2 starred French restaurant HOMMAGE, and also listed on the Michelin Bib Gourmand, showed us how to make Chawanmushi (Japanese steamed egg custard) with elements of French cuisines, using consommé soup as the soup stock. Ingredients (for 4 servings):
[Appareil for chawanmushi, 80g per serving]
500ml water
5g kombu kelp
8g dried bonito flakes
2 eggs
1% salt to the whole weight
Consomme soup, as needed
Kudzu starch, to taste
A pinch of yuzu pepper
120 to 160g sea bass (30 to 40g per serving)
