Today we’re baking the legendary Red Velvet — and you’ll be amazed at how easy it is to make. This cake is incredibly soft, moist, and perfectly paired with cream-cheese frosting. With its velvety texture and light frosting, it’s pure magic. We’ll make it on a sheet pan for simplicity, but you can always bake it in cake pans if you like. Ingredients for 1 sponge :
• 2 large eggs
• 1 cup plus 2 Tbsp granulated sugar (230 g)
• 1 cup buttermilk / light kefir (240 g)
• 2 cups + 1 Tbsp Cake Flour (≈ 250 g)
• 1½ Tbsp cocoa powder (5 g)
• ½ tsp Salt (2 g)
• ½ tsp baking soda (2 g)
• ½ tsp baking powder (2 g)
• ½ cup vegetable oil (≈ 100 g)
• 1 tsp 5 % ( and 9%) vinegar
• Red food coloring (gel-or-paste) as needed
For the frosting:
• 2⅔ cups cream cheese (600 g)
• ¾ cup powdered sugar (90 g)
• 1 cup heavy cream 33–36% fat (250 g)
Baking Instructions
• Bake at 330°F (165 °C ) (no convection, top-bottom heat) until a toothpick comes out clean — usually 20 minutes.
