Ethnic Armenian Kitchen's Easter Biscuits (Kahke)

Ingredients:
• 1.5 Kg fine Semolina, number 0 (Ferkha)
• 250 g granulated sugar
• 13 g fine mahleb
• 1/2 tbsp fine cardamom
• 1/2 tbs black seeds
• 1/2 of one nutmeg
• 515 g vegetable ghee
• 1 1/4 cups warm water (additional 1/4 cup can be added if needed)
Yeast mix:
• 1/4 cup warm water
• 1/2 tbsp yeast
• 1/2 tsp granulated sugar
Walnut filling:
• 100 g chopped walnuts
• 1/2 tsp cinnamon
• 1 tbsp icing sugar
Pistachio filling:
• 100 g pistachios
• 1 tbsp icing sugar
Date filling:
• 300 g seedless dates
• 100 g chopped walnuts
• 1 1/2 tsp cinnamon
• 2 tbsp of vegetable oil
Egg wash:
• 2 egg yolks
• 2 tbsp water
** Make sure to rest the dough 3-4 hours before shaping and baking at 350°F/175°C
