Step-by-step instructions to make the perfect Chinese Takeaway Chicken with Cashew Nuts!!!

Ingredients:
1 Chicken Breast
2 Cloves of Garlic
1 Small Onion
½ Carrot
Boiling Water or Stock
125g/4oz Bamboo Shoots
125g/4oz Water Chestnuts
1 Spring Onion
Salt, White Pepper, Sesame Oil, Light Soy Sauce, Shaoxing Wine for seasoning
Cornflour Slurry
Handful of Roasted Cashew Nuts
Vegetable Oil
Description:
This popular Chinese Takeaway dish has roots in Missouri, USA, where it was developed in the 1960’s to combine Cantonese Cooking and local produce to make a dish that appealed to Western tastebuds.
Method:
Heat a drizzle of oil in your pan
Finely chop/mince the Garlic and chop the Onion into cubes, then add them to the oil in the pan
Slice up half a Carrot and add into the pan
Chop the Chicken into bite size pieces and add to the pan, heat through ensuring that the Chicken is thoroughly cooked through
Add a cup/ladle of stock or boiling water and simmer for 1-2 mins
Once the Chicken is cooked through, add in the Bamboo Shoots and Water Chestnuts
Season with a dash of Light Soy Sauce, Salt, White Pepper, Shaoxing Wine and Sesame Oil
Stir through some Cornflour Slurry to thicken the sauce, then add a splash of Dark Soy Sauce for a slight colouring
Finally add the Cashew Nuts and stir through (adding the Cashew Nuts at the end ensures that they stay crunchy)
Garnish with chopped Spring Onions
Serve with Boiled Rice and Enjoy!
Top Tip:
Replace the Chicken with King Prawns, Beef, Tofu or Quorn meat or add more vegetables for a veggie version!!!
Double up quantities to cook for a family of 4!!!
