Step-by-step instructions to make the perfect Chinese-Takeaway-Style King Prawn Kwai Diew!!!

Ingredients:
100g/3.5oz King Prawns
300g/10.5oz Thick 10mm Ho Fun Rice Noodles
½ Bell Pepper (can mix red and green)
½ Small Onion
2 Eggs (beaten)
1-2 Fresh Chilli Peppers (sliced)
3 tsp Curry Powder
1 Spring Onion
Salt and White Pepper, Shaoxing Wine, Light Soy Sauce, Sesame Oil, Chilli Oil, Vegetable Oil for frying
Optional: Beansprouts
Description:
A vibrant, flavourful dish with origins in Southeast Asia (notably Hokkein Villages). It is popular in Malaysia, Singapore and Hong Kong street food stores.
Method:
Rehydrate the noodles by placing them in a bowl of boiling water and covering the bowl for a few minutes
Drain the water and leave the noodles to dry
Add a splash of oil to the pan and heat to a high temperature
Add the prawns to the oil to cook them through until they are pink and white and then remove them and set them to one side
Add to the empty pan the onion and peppers and fry
Then add the beaten egg to make a scrambled omelette
Method Continued:
Add the hydrated noodles to the pan and stir for 2-3 mins
Then place the cooked King Prawns back into the pan and continue to stir
Add the Fresh Chilli, Chilli Oil, Shaoxing Wine, Salt and Pepper, Light Soy Sauce and Sesame Oil to taste
Then add the Curry Powder
Lastly add in the Spring Onions and fry until some of the noodles begin to turn a golden brown
Serve and enjoy!
Top Tip:
Replace the King Prawns with Chicken, Beef, Tofu or Quorn meat or add more vegetables for a veggie version!!!
