This refreshing carrot cucumber salad with garlic, dill, and vinegar is bursting with crunch and flavor! Inspired by Korean-style salads, this version uses everyday ingredients — no fermentation needed. It’s quick, healthy, and perfect as a side dish, light lunch, or meal prep favorite.
🥕 INGREDIENTS:
6–7 carrots
2 cucumbers
1 onion
1 clove of garlic
Fresh dill (to taste)
1 tablespoon vinegar
½ glass vegetable oil
Salt (half tablespoon)
Sugar (just a pinch)
Spices: black pepper, paprika (optional: ground coriander, cumin)
🧄 How It’s Made:
1) Grate the carrots and julienne the cucumbers. Finely chop the onion.
2) Lightly fry the chopped onion in oil until golden.
3) In a large bowl, mix carrots with salt, sugar, and vinegar. Rub gently by hand until slightly softened.
4) Add crushed garlic and spices. Pour the hot oil (with fried onion) over the mixture — this helps bloom the flavors. Mix well.
5) Add cucumbers and chopped dill, then stir everything together.
6) For best flavor, let it marinate for a few hours or overnight in the fridge.
