HOW TO MAKE COCONUT RICE USING COCONUT CREAM | COCONUT RICE RECIPE

This is a simple coconut rice recipe. It is going to wow your taste buds!
Notes: *Oven roast the vegetables for the rice @ 400°F for 30-40mins * warm the coconut cream for 1 min in the microwave and mix before using.
Ingredients
For the rice:
11/4 cups chicken stock/broth
5 cups long-grain parboiled rice
2 cups water
2.5 cups unsweetened coconut cream (see notes)
Salt to taste
2 teaspoon chicken bouillon
1 teaspoon curry powder
5 garlic gloves
½ red onion chopped
To roast the peppers:
1 poblano pepper
2 red bell peppers
1 habanero
½ onion bulb
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon salt
½ teaspoon rosemary
1 tablespoon avocado oil
For the shrimps:
20-25 jumbo shrimp
½ teaspoon thyme
½ teaspoon oregano
½ teaspoon paprika
½ teaspoon crushed chili
½ teaspoon salt
½ lemon juice
For the veggies:
5 carrots
1 medium cabbage
11/2 tablespoon low sodium soy sauce
11/2 tablespoons sweet chili sauce
