Preparing Marinated Fish
Ingredients:
Fourfinger threadfin (mayau fish in Cantonese), 1 whole fish, 500 g
Coarse salt, 15 g
Kombu (Japanese dried kelp), 1 piece
Frist Dish - Grilled Fish
Ingredients:
Marinated fourfinger threadfin
Second Dish - Fish Soup
Ingredients:
Head and tail of the marinated fourfinger threadfin
Firm tofu, 2 pieces, cut into chunks
Tomatoes, 2, cut into chunks
Ginger, 3 slices
Kombu (used for marinating), cut into strips
Tips:
The fourfinger threadfin is already salted from marinating, so no extra salt is needed—it’s tasty enough.
When splashing in boiling water, go slow and careful to avoid splashes and burns.
預備醃魚
材料:
馬友魚 又稱午仔魚 一條500克
粗鹽 15克
昆布 一片
第一味 烤焗魚
材料:
已醃馬友魚
第二味 滾魚湯
材料:
已醃馬友魚頭部和尾部
硬豆腐2件 切件
番茄2個 切件
薑3片
醃魚用的昆布片 切條
貼士:
*馬友魚已用鹽醃過 所以不用加鹽已夠味
*灒入適量沸水時 要小心 逐少加 以免沸水彈出而受傷
