Persimmon Bagel | Quick Bagel That Can Be Made In 90 Min | Chewy and Fluffy Japanese Style

Today I’m making a quick bagel that needs only one rise. The result is slightly chewy and very fluffy. I rolled some dried persimmon in it, and it goes perfectly with a spread of butter. You can try other fillings you desire, such as nuts, cheese, dried fruits… Enjoy!

Ingredients (for 4 bagels)
bread flour 300g
salt 4g
yeast 1g
honey 11g
water 168g
semi dried persimmon 2 pc

1. Cut the persimmon into small pieces and set aside.
2. Add all the ingredients into a mixing bowl and knead 10 min on medium speed.
3. Remove from the bowl, and cover with a damp towel and rest for 3min. Divide into four equal portions and shape each pieces into a ball. Cover with a damp towel and rest for 5 min.
4. Roll each dough into a rectangle and shape the bagel with persimmon in. Place a a greased pan or non stick mat and proof in 40C oven, 75% humidity for 30min.
5. Bring a pot of the water to a simmer and add honey. Boil each bagel for 30 sec, with a turn after 15sec. Bake in preheated oven 200C for 21min
6. Serve warm with butter.
