Making Bai Tang Gao sounds very straightforward with just a handful of everyday ingredients, but getting the right balance of taste and soft resilience texture can be a bit challenging. Often the cakes turn out dense and have a rubbery texture. I took quite a bit of experimentation to perfect the steps for consistent success every time.
