To follow this video you will need:
1kg diced Lamb
3 tablespoons (approx.) Olive Oil
1 Onion sliced
2 tablespoons Plain Flour
4 cloves Garlic, crushed
1 tablespoon Tomato Puree
2 400g tins Chopped Tomatoes
500ml Lamb or Chicken Stock
2 Cinnamon Sticks
150g dried Apricots, chopped
1 400g tin Chickpeas, drained & rinsed
Plus (Optional)
100g dried Dates
Marinade
1 teaspoon Smoked Paprika
3 teaspoons ground Coriander
3 teaspoons ground Cumin
½ teaspoon ground Turmeric
½ teaspoon Cayenne Pepper
1 teaspoon ground Ginger
Zest and juice of 1 Orange
You will also need a large ovenproof casserole with lid, a large frying pan and a large mixing bowl and spoon
