Today showcases two Asian noodle dishes; Japchae and Beef Ho Fun. To start, Lan Lam shows Julia Collin Davison how to make Japchae, a Korean noodle dish made of sweet potato starch noodles that have a great, bouncy texture. Lan provides tips on ensuring your japchae noodles are perfectly cooked along with preparation tips for the long noodles. Jack Bishop discusses the difference in types of Asian vinegars and how they impact the flavor of dishes. Dan Souza makes Bridget Lancaster a Cantonese favorite, beef ho fun, made with fresh ho fun (rice) noodles and beef that is velveted (soaked in a slurry to change the texture of the meat).
