I used recipe for mini pretzel buns from my website, but shaped them into a bagels ( 120g dough each).

To make crust with specific for pretzel brown color you have 2 options:

1. Lye bath
2. Soda bath

For lye bath:
900g water +30g lye mix well untill no white lumps remain.
⛔️Use plastic container, rubber gloves for safety.

For soda bath:
Boil 1 gallon of water + 3 tbs of baking soda. Dip each bagel into a boiling water, then bake.
