So, who doesn’t love Pumpkin Spice EVERYTHING?! What about Boba?! Well, I love both and decided they needed to be merged into ONE! Here’s my recipe for Pumpkin Spice flavored Boba Pearls!

Note: Tbsp = Tablespoon & Tsp = Teaspoon
Pumpkin Purée*
Pie / Sugar Pumpkin or a Canned Pumpkin
1. Roast at 400 degrees for 25-20 minutes
2. Pass roasted pumpkin through a fine-mesh sieve
*This 1.8 lb pie pumpkin yielded 1 1/3 cup of purée. I only used 2 Tbsp of purrée and I froze the rest for future recipes.
Pumpkin Spice Boba Pearls
3 Tbsp Water
2 Tbsp Pumpkin Purée
1.5 Tsp Pumpkin Spice (I used Trader’s Joe’s Blend)
2 Tbsp Muscovado Brown Sugar
3/4 Cup Tapioca Flour*
*set aside 2 Tbsp of the 3/4 cup of Tapioca Flour. Also, a little extra for dusting and rolling.
1. In a saucepot on medium-low heat combine water, pumpkin purée, pumpkin spice, and muscovado sugar. Stir until sugar is melted and purée is well incorporated.
2. Add 2 Tbsp of the 3/4 of Tapioca Flour to the sugar and purée mixture and stir to combine. There may be some lumps but they will be kneaded out.
3. After incorporating the 2 Tbsp of Tapioca Flour turn off the heat and add the remaining Tapioca Flour. Combine most of the flour into the mixture.
4. Pour the mixture onto a silicone mat or parchment paper and knead until it turns into a soft dough. If the dough is too sticky use extra tapioca flour, a bit at a time.
5. Cut a sliver of the dough and roll it into a rope. Cut the rope into half-inch pieces and roll in-between palms to form boba pearls.
6. Add about 1/2 cup of the boba pearls to boiling water making sure the boba is fully submerged.
7. Boil for 10 minutes. After 10 minutes, turn off the heat, cover, and let the boba sit for another 10 minutes.
Pumpkin Spice Boba in Pumpkin Spice Syrup
1/2 Cup Cooked Boba
2 Tbsp Muscovado Brown Sugar
1/2 Tsp Pumpkin Spice
1.5 Tbsp Pumpkin Purée
1 Tbsp Water
dash of salt*
salt balances/ enhances the sweetness
8. Drain boba and place them back into the pot with sugar, spices, and puree. Stir on medium-low heat and if too thick had some water. Don’t forget a dash of salt to balance the sweetness. Stir until sugar is melted and purée is well incorporated.
9. We now have Pumpkin Spice Boba Pearls! Let’s make a drink!
Milk Tea Pumpkin Spice Boba
1/2 Cup Strongly Brewed British Blend Black Tea (Tetley)
3 Tbsp Pumpkin Spice Boba Pearls
1 Cup Oat Milk
Ice
10. Add Pumpkin Spice Boba Pearls to your glass and coat the walls of the glass.
11. Add Black Tea, Oat Milk, and Enjoy!
