If you love butternut squash ravioli or butternut squash in any form you're going to really enjoy these sweet and savory empanadas. The roasted butternut squash along with the caramelized shallots and coated with a salted maple glaze will sure to be your new favorite way to enjoy butternut squash! They're sure to be great all year round but give them a try for the upcoming holidays 🤗

Yields 16 Empanadas (depending on the shape of puff pastry)
Roasted Butternut Squash Purée
1.5 lbs Butternut Squash (Roast at 400° for 35 minutes)
1/4 Tsp Salt
1/2 Tsp Ground Cinnamon
2 Tbsp Maple Syrup
3.5 oz Marscapone Cheese
Caramelized Shallots
2 Medium Shallots, Sliced
2 Tsp Avocado Oil
2 Tsp Unsalted Butter ( little more if shallots get dry)
1/8 Tsp Himalayan Salt
Fresh Black Pepper to taste
2 Cloves of Roasted Garlic
Salted Maple Glaze
2 Tbsp Maple Syrup
2 Tbsp Water
Pinch Himalayan Salt
Egg Wash
1 Egg Yolk
1 Tsp Heavy Cream
1 Tbsp Water
Assemble
2 Sheets of Puff Pastry (cut 3.25” X 5” or any shape you like 🤗)
About 1 Tbsp & 1 Tsp of Butternut Squash Puree
1 Tsp Caramelized Shallots
Egg Wash the edges
Crimp the edges
Brush Egg Wash
Bake at 400 for 15-18 minutes until golden brown
