・Soy sauce: 1 tbsp
・Sake: 1 tsp
・Grated ginger: plenty
・Oil: 1 tbsp
・Shiso leaves: 5
・Sake: 2 tbsp (for steaming)

・Sake: 1 tbsp
・Soy sauce: just under 3 tbsp
・Mirin: just under 4 tbsp
