BEST ETHIOPIAN FOOD : SHIRO RECIPE - ቀላል የሽሮ አሰራር Part 1

Here's a simple way to make the BEST Vegetarian Shiro you've ever had. To the Vegans out there, all you have to do is either skip the Clarified Butter (Niter Kibe) or see if you can find a Vegan Ethiopian Butter. I'll be making an episode on it very soon.
Ingredients you'll need,
Shiro Powder (Ethiopian Blend Chickpea Flour)
1 Red or White Onion (Chopped)
2 Plum Tomatoes (Diced)
1 Jalapeno (Sliced)
5 Cloves of Garlic (Chopped)
2 Bay Leaves
1.5-2 cups of Ethiopian Tea Spice Infused Hot Water
Salt & Pepper
Black Cardamom
Olive Oil
Turn up your pot on Medium Heat and wait a few minutes for it to heat up. Then add the chopped Onions along with a few tablespoons of the Ethiopian Tea Spice Infused Water. Let the onions sweat for 5-7minutes and once it starts to dry out, add the Olive oil along with the chopped Garlic and let them all caramelize for 3 minutes.
Then it's time for the diced tomatoes to be added to the mix and let them soften up based on your liking, I do about 8 minutes. I also added the Bay Leaves along with that to enhance the flavor profile.
Once the tomatoes are cooked to your liking, it's time to add the Shiro or Chickpea Flour. Once the Shiro is in, add the spiced Tea slowly. Make sure you keep stirring to avoid them from clumping together. Add half of the sliced Jalapenos, cover, and let them make magic! This process takes anywhere about 15-18 minutes.
Keep stirring every few minutes while making sure it gets to your desired consistency. I like when my Shiro is a bit runny so that's what I did here.
Once it's almost done cooking, turn down the heat and let it keep simmering. Now it's time to season. Season with Salt, Pepper, & Black Cardamom. Stir one more time and it's time for some Clarified Butter Action! It will dramatically increase the richness of any Ethiopian Food you put it in! Seriously! If you're Vegan, like I said, skip this step. Let the Shiro simmer along with more sliced Jalapenos and now it will be ready to serve. I made a simple Tomato Salad to go along with it. You can do any of your favorite sides you want.
