White Choc. Chip Mac Nut Cookie (makes 2)
1 egg
1 tsp vanilla https://amzn.to/2Q4BGk2

1/3 cup shredded mozzarella cheese
1 1/2 Tbsp brown sugar substitute https://amzn.to/2zYuZ7Z
1/2 Tbsp powdered erythritol https://amzn.to/3Bd5vSP
1/4 cup chopped macadamia nuts https://amzn.to/2Q4AYmS
1 Tbsp coconut flour https://amzn.to/311CcAg
15 white chocolate chips
pinch of pink salt https://amzn.to/2PW9z6j
Combine all wet ingredients together, than adding dry ingredients, stirring in between each one to make sure it's all incorporated, and saving the coconut flour for last.
Once everything is all mixed together, pour half the mixture onto your preheated chaffle maker and let cook for 3-5 minutes. Remove when done and let cool slightly before eating.
Approx macros per chaffle: Calories - 310 | Fat 24.5g | Total Carbs - 7.6g | Fiber 4.3g | Net Carbs 3.3g | Protein 12.8g
Oatmeal Cookie (makes 4)
2 eggs

1/2 cup shredded mozzarella cheese

1 Tbsp oat fiber https://amzn.to/2UFfo6Q

pinch of nutmeg https://amzn.to/2ZMrAaS
Start by combining all wet ingredients together, than adding dry ingredients, stirring in between each of them (except the oat fiber, I start by folding that in first, then stirring) to make sure they're all incorporated.
Once everything is all mixed together, pour a quarter of the mixture onto your preheated chaffle maker and let cook for 3-5 minutes (make sure you get a good mix of the batter and the cheese). Remove when done and let cool slightly before eating.

Peanut Butter Cookie (makes 2)
1 egg

Start by combining all wet ingredients together, than adding dry ingredients, stirring in between each one to make sure it's all incorporated, and saving the coconut flour for last.
