Cream Cheese Custard Bun |Overnight fermentation for ultimate softness and flavour

Ingredients
Bread Dough
Bread flour 250g
Instant yeast 2g
Salt 4g
Sugar 15g
Egg 27g
Water 150g
Butter 25g
Add everything except butter to the mixing bowl and mix on low speed for 8 min until medium gluten development. Add pieces of butter and mix for another 5 min until full gluten development. Cover and rest in the fridge overnight.
Cheese custard
Milk 145g
Cream cheese 55g
Sugar A 15g
Egg yolk 40g
Sugar B 20g
Pastry flour 5g
Corn starch 7g
1. Mix egg yolk and sugar until sugar complexity dissolves. Sift the flour and corn starch into the batter and mix well.
2. In a small pan, bring the milk and cream cheese to a gentle simmer over low heat. Add half of the mixture to the egg yolk batter slowly while mixing. Pour the batter back into the pan and cook until the mixture thickens and becomes thin again.
3. Cover and cool completely in the freezer.
Topping
Flour 35g
Egg 35g
butter 35g
Icing sugar 35g
Soften the butter in the microwave (med power) until half melted. Mix all the ingredients with an immersion blender until smooth. Cool in the refrigerator for ~1hr until it’s slightly hardened.
Assembly
1. Divide the dough into six equal parts and shape it into balls. Cover and rest for 30min.
2. Roll each dough into an oval and wrap ~1tbsp of filling inside. Seal and place sealed side down into a greased pan. Proof at 35C for 30min at 70% humidity.
3. With a flat piping tip, pipe the topping onto the dough and bake in a preheated oven at 220C for 14min or until the top is lightly browned. Serve warm.
