How to Make Fried Cubed Steak - Country Fried Steak and Gravy

54) Cubed Steak, Fried
cubed steak
1 1/2 cups self-rising flour
1 large egg
1/4 cup buttermilk
steak seasoning, Weber Steak n Chop
black pepper
salt
Remove meat from the package 30 minutes before cooking. Place flour on a shallow pie plate. Beat eggs and buttermilk in another. Season steak with seasoning, pepper, and salt. Dip in egg mixture then in flour, pressing into the meat. Coat both sides, sit for 5 minutes. Fry in 1/2-inch hot oil: 3 minutes on first side, then flip and cook 2 more minutes, adjust heat to prevent burning. Remove oil, use drippings for Recipe #613 White Milk Gravy. Serve gravy over steak.
613) White Milk Gravy
1/2 cup self-rising flour, in sifter
1/2 cup shortening or salted butter
1 tsp salt
1/2 tsp black pepper
3 cups milk
Start with a large skillet, at least 10 inches (larger if available). Melt shortening or butter over medium heat. Turn to medium-high. Sift flour quickly into the melted fat. Mix thoroughly with a wire whisk. Add salt and pepper. Let the flour brown to golden, then add milk; you will smell a great aroma as it browns. Stir constantly, scraping bottom and sides, to prevent lumps. Pour when it thickens; it will continue to thicken. If it is too thick, add a bit of milk and whisk until desired consistency.
Summer Supper: Serve over biscuits with sliced cantaloupe. “Family Favorite”
