Makes 20 Cream Puffs
Choux Pastry: (Adapted from Martha Stewart's (THE QUEEN) Recipe
1/4 cup (1/2 stick) unsalted butter, cut into tablespoon pieces
1/2 tsp granulated sugar
Pinch of salt
1/2 cup water
1/2 cup all-purpose flour
2 large eggs
1 egg + 1 TB water (egg wash)
Bake at 375 degrees F for 30 minutes.
Raspberry Puree:
2 pints fresh raspberries
1/4 cup granulated sugar
juice from half of a lemon
Mascarpone Whipped Cream:
12 oz. heavy cream
1/2 cup - 1 cup Confectioners' Sugar
1/2 tsp vanilla extract
8 oz. Mascarpone cheese
Zest from a Lemon
