S’mores Cookies | Chewy, Gooey, and Perfectly Delicious

These S’mores Cookies are the ultimate treat for any cookie lover! Packed with graham cracker crumbs, semi-sweet chocolate, and gooey mini marshmallows, they taste just like your favorite campfire snack – no campfire needed! Plus, they're super easy to make and perfect for parties, family gatherings, or just because. Here’s how to make them:

Ingredients:
¾ cup butter, room temperature
½ cup granulated sugar
½ cup light brown sugar, packed
1 large egg
1 egg yolk
1 tsp vanilla extract
1 ¾ cups all-purpose flour
1 cup graham cracker crumbs
½ tsp baking soda
½ tsp salt
1 cup semi-sweet chocolate chips
1 (1.5 oz) Hershey’s chocolate bar, chopped
1 heaping cup mini marshmallows

Instructions:
Preheat oven to 375°F and line a baking sheet with parchment paper.
Cream together butter, granulated sugar, and brown sugar for 2-3 minutes.
Add egg, egg yolk, and vanilla, mixing well.
Mix in flour, graham cracker crumbs, baking soda, and salt until combined. Stir in chocolate chips.
Chill dough for 15 minutes.
Scoop dough into 2-tablespoon-sized balls, place on baking sheet, and press down slightly.
Bake for 8 minutes. Remove from oven, press Hershey’s chocolate pieces and mini marshmallows on top, then return to oven for 3-5 more minutes.
Cool for 5 minutes before transferring to a wire rack.
