🍗 Ingredients for Kanpur Style Chicken Biryani:
For Chicken Marination:
1 kg chicken (with bone)
1 cup curd (dahi)
2 tbsp ginger garlic paste
1 tbsp red chili powder
1 tsp garam masala
Salt to taste
Juice of 1 lemon
Fresh coriander & mint leaves (chopped)
2 tbsp mustard oil or ghee
For Biryani Rice:
500g basmati rice (soaked for 30 mins)
Whole spices (2 bay leaves, 4 cloves, 4 green cardamoms, 1 black cardamom, 1-inch cinnamon stick)
1 tsp salt
Water for boiling
For Cooking:
3 large onions (thinly sliced & fried till golden brown – birista)
2-3 green chilies (slit)
Saffron soaked in warm milk or yellow food color (optional)
Ghee or oil for layering
Kewra water or rose water (few drops)
