“Bagara Baingan is a popular Hyderabadi curry made using tender round brinjals simmered in a thick and aromatic masala. The masala is prepared with roasted peanuts, sesame seeds, coconut, coriander seeds, and red chillies, blended with tamarind for a perfect balance of spice and tang. Slow-cooked until the oil separates, this dish turns rich, flavorful, and irresistible. Best served hot with steamed rice, roti, bagara rice, or biryani.”
Ingredients – Bagara Baingan
½ kg round brinjals (baingan)
3–4 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
1½ tsp ginger-garlic paste
3–4 dried red chillies
Curry leaves (few)
2 green chillies (sliced)
1 medium onion (fried)
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Fresh coriander leaves
For Masala Paste
2 tbsp peanuts
2 tbsp dry coconut pieces
1½ tbsp sesame seeds
1½ tsp coriander seeds
1 tsp cumin seeds
Tamarind (medium lemon size,
soaked & pulp extracted)
