She explains that the sap from agave is high in sugar but it also contains healthy fibers like fructans, which are linked to beneficial effects on your metabolism and insulin. However, conventional refining of agave sap destroys these positive benefits. The fructans are extracted and broken down into fructose, similar to how high fructose corn syrup is made.
