Follow me as I create the world's best French onion soup recipe based off of its historical origins. Champagne is what truly brings this version of the soup to life and is supposedly what was originally used if you believe the story that King Louis XV created this national treasure of a dish.

✅ Recipe:
First Make stock

Rough chop carrots, celery, and onions. And throw them on a sheet pan with beef bones and stew meat. Roast for 30 minutes at 350 degrees F. Take out and put into a crock pot (make sure to get all the bits and juices from the pan.

Add in a bouquet of flat-leaf parsley, fresh thyme, bay leaves, and coriander seeds (wrapped in cheesecloth makes this easier for later.)
Add enough water just to cover all of these in the crockpot.
Cook on low for 6-8 hours.

Next, Cut a bunch of onions. I used 14 medium-large yellow onions for a recipe that served 6.
Add good butter to the pot, melt, and add onions. You will probably have to do this in groups to not steam the onions. You want to make sure they are being caramelized to a deep brown. Low and slow with heat is best. It took me 3 rounds of caramelizing.
Remove the onions from the pot and deglaze with 1 1/2 cups of champagne. Scrape the bottom to get off all the good tasty bits. All that color is flavor.
Add back in your onions and some sprigs of thyme, and a dash of balsamic vinegar.

With the stock, strain off the top layer of fat and ladle out about 6 cups of broth into a pot. Reduce that down to about 2/3 and if necessary, take a cheesecloth and strain that out again to remove any bits. The broth should be very smooth.
Add broth to the soup pot. and let simmer on very low for about 30 minutes.

Fill your crocks with the soup and top with cubed toasted French bread, and cover with shredded gruyere cheese. Make sure that all the bread is covered with cheese, or it will burn. Broil in the oven until golden brown on top.
