Healthy and tasty Thotakura Pachadi made with fresh amaranthus leaves, green chillies, red chillies, garlic, and simple spices. This Andhra-style leafy greens chutney is very easy to prepare and perfect to serve with hot rice, roti, dosa, or idli. A must-try nutritious homemade pachadi for everyday meals.
Ingredients:
Amaranthus leaves (Thotakura) – 1 ½ bunches
Oil – 1/2 tbsp
Green chillies – 6
Dry red chillies – 6
Small onion – 1 (chopped)
Garlic cloves – 8 to 10
Garlic (crushed) – 7
Cumin seeds – 1 tsp
Coriander seeds – 2 tsp
Turmeric powder – a pinch
Tamarind – 2-inch piece
Salt – to taste
Hing (Asafoetida) – a pinch
For Tempering:
Oil – 2 to 3 tbsp
Mustard seeds – 2 tsp
Chana dal – 1 tbsp
Dry red chillies – 3
Curry leaves – few
