In this video I am going to show you how to make Adhirasam in tamil #videos #diwali #snacks
Ingredients
Raw Rice - 1 cup.
Jaggery - 3/4 cup.
Water - 1/2 or 1/3 cup.
Sesame seeds - 2 teaspoon
Ghee - 2 teaspoon.
Oil.
(OR)
Raw Rice - 1 kg
Jaggery - 750gm
Water - 1.5 or one and half cup
Sesame seeds - 2 teaspoon
Ghee - 2 tablespoon
Oil
Method:-
RICE FLOUR PROCESS
1) Clean and wash the raw rice for 3 to 4 times and soak for about one to two hours.
2) After two hours, drain the rice , spread and dry in a Clean white cotton cloth for half an hour
NOTE :- Do not Sundry, when you touch the rice, few should stick to your hand so don't dry completely, this is to retain moisture half an hour is more than enough.
3) In a mixer jar, add rice ,blend and sieve it.
4) Press the flour to retain moisture and close the lid. Flour shouldn't get dried completely to get proper adhirasam.
JAGGERY SYRUP PROCESS
1) 1 cup raw Rice, 3/4 cup jaggery and 1/2 or 1/3 cup water (or)
1kg raw Rice, 750gm jaggery and 1.5 or one and half cup water
2) In a Kadai, add jaggery and water, mix well to dissolve
3) once jaggery dissolved, filter it to remove impurities
4) Transfer filtered jaggery syrup into Kadai and heat it in a Medium flame and keep stirring.
5) When the syrup is thickened, Add few drops of syrup into plain water and gather, it should not dissolve in water but instead, form a loose ball in hand.
6) once you get a round shaped loose ball add two tablespoon of Sesame seeds , if required add roasted Sesame seeds and turn off the stove.
ADHIRASAM DOUGH
1) In a Fresh Rice Flour and jaggery syrup little by little and mix well.
2) Take a wooden ladle, mix well without lumps till it turns thick.
3) pour two tablespoon of ghee or oil and let it cool down.
4) rest the dough for 8 to 10 hours or a day.
5) Next day, prepare adhirasam and Keep dough in a room temperature for 3 days.
ADHIRASAM MAKING
1) In a iron kadai, Add required oil and heat it.
2) Once the oil is hot, put the flame in to Medium and drop the round shaped adhirasam in oil.
3) Flip both the sides and cook well.
4) once done, squeeze out the excess oil and prepare required adhirasam.
5) Transfer to a serving plate, Diwali special Adhirasam is ready to serve
