Butter chicken from Northern India is the home of complex taste and flavour. It showcases how chicken in particular can take on flavour. Ensure your chicken is lean and no skin or fat remains and that you marinate overnight in a covered dish or 3 hours will just do if you are in a rush.
Marinade Ingredients
2/3 cup natural yoghurt
1 - 2 tbsp lemon zest
1 tsp tumeric powder
2 tsp garam masala
1/4 tsp dried chilli flakes or chopped fresh chilli one teaspoon (seeds out)
1 tsp ground cumin seeds
1 tbsp fresh ginger grated
2 cloves garlic chopped finely
750 g chicken thigh cutlets cut into teasoon size pieces
Simmer the ingredients below till liquid becomes a paste
2 tbsp butter
1 can thick tomato puree
1 cup coconut cream
1 tbsp sugar
1 1/4 tsp salt
