Madras chicken curry was one of the first dishes I learned to make and I quickly fell in love with the complex flavours that the spice combinations delivered. I served mine with Poppadums' and Basmati rice. On the face of it the dish should be quite hot, but instead it is the flavour combinations that dominate every mouthful. This dish never stops tasting of luxury'
Ingredients for: Chicken Madras Curry
1 onion finely chopped
5 cloves of organic garlic crushed
2 tsp of minced ginger
1 tbsp rice bran oil
1 tbsp butter
4 tsp of Madras Curry powder (Pams)
1/2 tsp red chili flakes
1 tsp ground paprika
1 tsp of Kashmiri chili masala powder (Mrs Rogers)
1 tsp pink salt ground
1 tsp ground black pepper
500 grams of chicken thigh meat cut to bite sized pieces
200 mls passata
2 tbsp tomato paste
200 mls of coconut milk
