Todays recipe is from my mother's old family recipe book, because no Christmas would be the same without Traditional Almond Shortbread. This is a big recipe and will easily make 30 good sized shortbread. A good tip for getting your butter soft, is to leave in in a bowl in your oven with just the light on in the oven. This is really helpful if you are baking in the middle of winter.

Ingredients For: Traditional Almond Shortbread: Recipe for 30 medium sized shortbread
230 grams of salted butter
340 grams plain flour
120 grams castor sugar
140 grams of ground almonds
1/2 tsp salt
A full size baking tray. Halve the recipe for smaller baking trays.
Bake at 180 degrees C or 375 degrees F, for 15 minutes and check. If the shortbread is starting to turn brown, then it is ready. If not then bake for another 3 minutes and check again.
