⭐INGREDIENTS & NOTES⭐
#1 Panini Waffle Banana Wrap 0:48
1 tortilla wrap (wholewheat in my case)
a few tbsp natural crunchy peanut butter
a sprinkle of salt
a dash of cinnamon
a sprinkle of brown sugar
optional: vg butter / oil for the panini press/waffle iron
optional: vegan yogurt to serve this with

#2 Five Minute Pan Granola 2:08
½ cup quick cooking oats (50g)
1 banana
1 drizzle maple/agave/rice syrup
pinch of salt
1-2 tsp vegan butter
yogurt of choice for serving
1-2 tbsp chocolate chips

#3 Big Batch Frozen Dalgona 3:50
8 tbsp instant coffee granules
8 tbsp sugar
8 tbsp hot boiling water
per Dalgona latte
1-3 tbsp whipped coffee
ice cubes
milk of choice

→ 4-8 servings (depending on how strong you drink your dalgona)

2 slices sandwich bread
a few tsp jam of choice
vegan cream cheese or nut butter of choice
(or maybe also some banana slices to fill these with??)

#5 Fried Rice with Vegan Omelette 6:44
for the rice:
1-2 shallots
1-2 small carrots
1 clove garlic
1 tbsp oil for the pan
1 splash of soju/white wine/vegetable broth (for deglazing)
1 serving cooked rice (or express rice)
if the rice is dry: ¼ cup (60ml) water to revive it
1-2 tbsp soy sauce
1 tbsp ketchup
1 drizzle sriracha
1-2 tsp sesame oil
1 spring onion
→ 1 serving
for the “egg”:
400g silken tofu (14oz)
1/2 cup (60g) chickpea flour
2 tbsp (14g) rice flour
1 tsp sugar
1 tbsp white wine vinegar
1 tsp baking powder
¾ tsp salt
½ tsp kala namak, plus an extra pinch added right before serving
1/4 tsp turmeric
¼ cup (60ml) non dairy milk
oil for the pan
→ yields around 4 omelettes

#6 Ricepaper Yogurt Snack 9:03
1 medium to large rice paper
~3 tbsp mango protein vegan yogurt (or flavoured yogurt of your choice)
~2 tbsp berries or fruit of choice
→ my recommendation is to not let it freeze for long, 30 min - 1 hr should be enough!

#7 Cinnamon Roll Pancakes 10:31
for the batter:
120ml milk (½ cup)
1 tbsp white wine vinegar
4 ½ tbsp apple sauce
1 tsp vanilla extract or a few drops vanilla aroma
120g all purpose flour (1 cup)
3 ½ tsp baking powder
2-3 tbsp sugar
pinch of salt
for the filling:
2 ½ tbsp melted vegan butter
3 tbsp date syrup
1 tsp cinnamon
1 pinch of salt
2-3 tsp flour, to adjust consistency
1 small plastic bag or piping bag
a little coconut oil for the pan
→ yield around 4-6 medium to large cinnamon pancakes
(depending on size of your pan etc, but 2 servings roughly)
for the frosting I combined:
3 tbsp powdered sugar
1 tbsp melted vegan butter
1 tsp vegan cream cheese
salt
if needed, a few drops of water to thin this out, less is more!
if it gets too thin, add more sugar
