RECIPE: INGREDIENTS: One cup sugar, 2 eggs, 1 cup of persimmon pulp, 2 tablespoons of melted butter, 1 tablespoon of vanilla, 1/4 a cup of milk, one and a half cups of flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, a half a cup of raisins or dates or dried fruit ( apricots or prunes) 1/2 a cup of nuts, either walnuts or pecans chopped.
DIRECTIONS: Beat eggs together, add milk, sugar persimmon pulp, melted butter, and vanilla all together. Add dry ingredients,mix well, Add raisins, nuts and dates. ( dates optional) Put batter in loaf pan, greased and floured. Bake at 350°F for 45 to 60 minutes.
