Msemmen or Maarek specialty of all the North African countries. Msemmen are traditional, rich, layered, crêpe-like flatbreads They're squares of dough very thinly spread out, folded in on themselves like an envelope then cooked to give the appearance of layered, flaky and tender parcel.
In today's video, I'm sharing several tips and tricks for preparing and shaping so you can easily prepare shapely squares of this North African specialty.
If you're not familiar with Msemmen, they are similar to Saudi and South Asian Mutabbak, Matabbak, Mutabbaq as well as Somali and Yemeni Malawach, Malawah Malawax, Indian Paratha, North African Meloui, Melwi and Turkish Gözleme.
In this video series, I'll be showing you several ways to prepare and enjoy this North African specialty. So please stay tuned for the rest of the videos in this series!

🍴 INGREDIENTS 🍴
👉 English
500g - 2 cup semolina flour/fine semolina (semoule fine, smid daqiq)
500g - 2 1/2 cup flour
1/2-2 tsp salt (use 2tsp if you're serving it savory, 1/2tsp if sweet)
1- 2 tbs sugar (use 2TBS if you're serving this sweet, less if savory)
pinch of dry yeast
750ml - about 3 cups water
250g - 1 cup melted butter for folding
👉 En Française
500g - 2 tasses de farine de semoule (semoule fine, smid daqiq)
500g - 2 1/2 tasse de farine
1-2 cuillères à café de sel
1- 2 cuillères à soupe de sucre
750ml - 3 verre d'eau
250g - 1 tasse de beurre fondu pour le pliage
👉Magyarul
500 g - 2 1/2 csésze liszt
500g - 2 csésze finom búzadara
1-2 tk. Só (több sót, ha sósan szereted, kevesebb, ha édesen)
1- 2 ek cukor
750ml - körülbelül 3 csésze viz
250 g - 1 csésze olvasztott vaj a hajtogatáshoz
