Algerians are proud of their own traditional fast food, and as many Algerians say with pride, there are no McDonald's here. And many say there will never be! Each region has their very own fast food and street. In a past video, I share with you all the Orani Garantita.

Today, I'll be preparing a traditional Algiers style pizza that dates back over a century even before pizza was ever popular in the west. Amicably known as 'Pizza Carré' (square pizza) it's a childhood treat for many Algerians!
This traditional pizza was traditionally prepared with all semolina by bakeries who wanted to use the leftover dough. Much like the Garantita this economical pizza is sold for very little to sustain the hungry workers and students.
Interestingly enough, it doesn't have any cheese on it, but sometimes you have find it with anchovies as well.
This pizza is nice to prepare for the children, as an side to any soup or salad, for taking to work, school or on a picnic. I often prepare it for Ramadan for my children too !
Simple but so tasty! Give it a try!

🍴 INGREDIENTS 🍴
👉 English
dough:
400g -3 2/3 cups flour
60g - 1/4 cup fine semolina
1 egg
1tbs yeast
1tbs sugar
4tbs olive oil
1 tsp salt
about 1 1/2 - 2 cups warm milk (amount depends on the absorption of your flour)
sauce:
1 large onion, minced
3 cloves of garlic
4 large ripe tomatoes, grated
sprig of fresh thyme (or 1 tsp dried)
1 bay leaf
1 TBS tomato paste
pinch of sugar
olive oil
salt & black pepper, to taste
decoration:
chopped parsley
pitted sliced olives
👉 En Française
pâte:
400g -3 2/3 tasses de farine
60g - 1/4 tasse de semoule fine
1 oeuf
1tbs levure
1tbs de sucre
Huile d'olive 4tbs
1 cuillère à café de sel
environ 1 1/2 - 2 tasses de lait chaud (la quantité dépend de l'absorption de votre farine)
sauce:
1 gros oignon émincé
3 gousses d'ail
4 grosses tomates mûres, râpées
brin de thym frais (ou 1 c. à thé séché)
1 feuille de laurier
1 CS concentraté de tomate
pincée de sucre
huile d'olive
sel et poivre noir, au goût
décoration:
persil haché
olives dénoyautées
👉Magyarul
tésztához:
400 g -3 2/3 csésze lisztet
60g - 1/4 csésze finom búzadara
1 tojás
1ek élesztő
1 ek cukrot
4 ek olívaolaj
1 tk sót
körülbelül 1 1/2 - 2 csésze meleg tej (az összeg a liszt felszívódásától függ)
szósz:
1 nagy hagyma, darált
3 gerezd fokhagymát
4 nagy érett paradicsom, reszelt
friss kakukkfű (vagy 1 tk szárított)
1 babérlevél
1 ek paradicsompüré
csipetnyi cukor
olivaolaj
só és fekete bors, ízlés szerint
dekoráció:
apróra vágott petrezselyem
olajbogyó
