In this episode of Dish With Mary, host Mary Mammoliti is joined by Edmonton chef Edgar Gutierrez, owner and executive chef of Kanto 98, to make binakol, a traditional Filipino chicken stew cooked with coconut water, aromatics, and young coconut meat. Binakol is a comforting, deeply flavourful dish that reflects Filipino home cooking and the importance of family meals.
As they cook together, Mary and Chef Edgar talk about Filipino food culture, childhood memories, and how cooking traditions are passed down through generations. Edgar shares how his heritage influences his restaurant, why Filipino cuisine is rooted in technique and patience, and how food can be a powerful way to share culture and identity.
This episode explores Filipino comfort food, coconut-based cooking, and the balance of savoury and subtle sweetness that defines binakol. It also highlights accessible cooking techniques, sensory cooking, and the joy of trying new cuisines for the first time.
