In this episode of Dish With Mary, host Mary Mammoliti is joined by Edmonton chef Brad Smoliak to make nalysnyky, traditional Ukrainian crepes filled with both savoury and sweet ingredients. Nalysnyky are a classic Ukrainian comfort food, often served at family gatherings and celebrations, and are known for their versatility, warmth, and connection to home cooking.
As they cook together, Mary and Chef Brad talk about growing up around the kitchen table, the role food plays in family traditions, and why cooking should always be fun and approachable. Chef Brad shares stories from his career cooking for Canada’s Olympic team and Queen Elizabeth II, as well as his personal journey in the kitchen and his belief that passion and joy are just as important as technique.
This episode explores Ukrainian cuisine, crepe-based comfort food, and how one simple dish can be adapted in countless ways, from savoury meals to sweet desserts. It also highlights food as a way to build confidence, bring people together, and reconnect with memories of home.
