Mac and Cheese, or Macaroni Cheese as us Brits call it, has a history that goes back to the 14th Century. This simple combination of pasta tubes in a cheese sauce is pure comfort food. Since 1937, North American kids have been brought up on the 'Kraft Dinner' - easy-to-make mac and cheese in a box. In this version, I make my macaroni cheese with 3 different cheeses and bacon. It's very easy to make, and very, very tasty.
