𝗥𝗘𝗖𝗜𝗣𝗘 𝗙𝗢𝗥 BAJRA KHICHDI
Preparation time 10 minutes
Cooking time 30-35minutes
Serve 2-4
Ingredients
For Cooking Bajra & Dals
2-3 heaped tbsp Ghee, घी
2 cups Bajra (soaked overnight), भिगोया हुआ बाजरा
½ cup Moong dal (washed), धुली हुई मूंग दाल
½ cup Chana dal (washed), धुली हुई चना दाल
Salt to taste, नमक स्वादअनुसार
1 no. Green chilli (less spicy & roughly torn), हरी मिर्च
Water as required, पानी
For Ginger Garlic Paste
4-5 no. Garlic cloves, लहसुन
1 inch Ginger (peeled & sliced), अदरक
2 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
For Curd Mixture
2 cups Curd (beaten), दही
½ tbsp Prepared ginger garlic paste, अदरक लहसुन का पेस्ट
2 tbsp Bajra flour, बाजरा का आटा
Salt to taste, नमक स्वादअनुसार
2-3 cups Water, पानी
For Kadhi
1-2 tbsp Ghee, घी
Prepared curd mixture, तैयार किया हुआ दही का मिश्रण
For Bajra Khichdi
1 tbsp Oil, तेल
1 tbsp Ghee, घी
1 tsp Cumin seeds, जीरा
Prepared ginger garlic green chilli paste, अदरक लहसुन और हरी मिर्च का पेस्ट
2 medium Onions (roughly chopped), प्याज
2 medium Carrots (peeled & cut into small diced), गाजर
Salt to taste, नमक स्वादअनुसार
Cooked Bajra & Dals, पका हुआ बाजरा और दाल
1 fresh Green peas, हरे मटर
Salt to taste, नमक स्वादअनुसार
2 tbsp Ghee, घी
For Garnish
Ghee, घी
Coriander sprig, धनिया पत्ता
Process
For Cooking Bajra & Dals
● In a pressure cooker, add ghee, once it's hot, add soaked bajra, moong dal, chana dal, salt to taste, green chili, water as required and mix it well.
● Cover it with a lid and cook it for 10-12 whistles until cooked well.
● Keep it aside to depressurize the cooker.
For Ginger Garlic Paste
● In a mortar pestle, add garlic ginger, green chillies and grind it into a coarse paste.
● Keep it aside for further use.
For Curd Mixture
● In a bowl, add curd, prepared ginger garlic paste, bajra flour, salt to taste, water and give it a good mix.
● Keep it aside for further use.
For kadhi
● In a kadai or handi, add ghee, once it's hot, add prepared curd mixture and simmer it for 20-25 minutes on medium flames.
● Transfer it to a serving bowl and garnish it with coriander sprig.
● Serve hot with prepared bajra khichdi.
For Bajra Khichdi
● In a handi, add oil, ghee, once it's hot, add cumin seeds, prepared ginger garlic green chilli paste and saute it for a minute.
● Add onions, carrots, salt to taste and let it cook until onions are golden in colour.
● Add cooked bajra & dals, fresh green peas, salt to taste and give it a good mix.
● Cover it with a lid and let it cook for 10-12 minutes on low to medium flames.
● Finish it with ghee and mix it well.
● Transfer it to a serving dish, garnish it with ghee and coriander sprig.
● Serve hot with prepared kadhi.
