Learn how to make TOMATO SOUP from scratch

Ingredients:
2 large red bell peppers
5 medium ripe tomatoes
1 small onion, chopped
3 cloves garlic, minced
2 cups vegetable broth
2 tbsp olive oil
1/2 tbsp dried oregano
Salt & pepper, to taste
1 baguette (for crostini)
2 tbsp butter
1 tsp dried Italian herbs
Steps:
1. Roast peppers & tomatoes at 400°F until skins blister (20–25 min). Peel & roughly
chop.
2. Sauté onion & garlic in olive oil. Add roasted peppers, tomatoes, oregano, broth.
Simmer 15 min.
3. Blend until smooth, season with salt & pepper.
4. For crostini: slice baguette, brush with butter & herbs, toast until golden. Serve with soup.
